Chili for a Chilly Day

Chili is a great way to warm up on chilly fall day! I am sharing a favorite that I have made for years!

Chicken Taco Chili- Ingredients:

  • 1 small onion, chopped.

  • 1 15.5oz can black beans, drained.

  • 1 15.5oz can kidney beans, drained.

  • 1 8oz can tomato sauce.

  • 10oz package of frozen corn kernels.

  • 2 10oz cans diced tomatoes with chilies.

  • 4oz can chopped green chili peppers.

  • 1 packet taco seasoning

  • 1 tablespoon cumin

  • 1 tablespoon chili powder.

  • 3 boneless chicken breasts.

  • 1/4 cup chopped fresh cilantro


  1. Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.

  2. Nestle the chicken in to completely cover and cook on low for 8-10 hours or high 4-6 hours.

  3. Half hour before serving, remove the chicken and shred.

  4. Return chicken to slow cooker and stir in.

  5. Top with your favorite chili toppings and enjoy.
